Slaw

Tastes really good and nutritious. Superfood slaw.

Serves 4. Time: 20-25 minutes.

Ingredients

Salad

  • 1 cup purple cabbage, sliced thinly
  • 1 cup kale, center removed and sliced thinly
  • 1/2 cup carrots, shredded
  • 1/3 cup red onion, sliced thinly
  • 1/4 cup walnuts, chopped
  • 3/4 cup sprouts

Dressing

  • 1/2 cup mayo
  • 2 tbsp apple cider vinegar
  • 1 tbsp olive oil
  • 1 tbsp dijon mustard
  • 1 tbsp maple syrup
  • 3/4 tsp celery seed
  • salt and pepper, to taste
Method

Using a food processor with the slice attachment or a mandolin, slice the cabbage, kale and onion. Next, shred the carrots with the shred attachment or a grater. Put all ingredients in a bowl and add the walnuts. Thoroughly mix up all dressing ingredients and add it to the salad, stirring to evenly distribute. Cover and refrigerate for an hour. Add sprouts and serve. Good side dish for salmon.
