Broccoli Salad

Simple Summer salad with lots of flavor.

  • 2 cups broccoli, stems peeled and chopped
  • 3-4 strips of bacon, cooked, drained and chopped
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup chopped walnuts, optional


  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 table spoon shallot, small chop/mince
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 2 tsp mayonnaise
  • 1 tsp dijon mustard
  • Salt and pepper, to taste


Prepare an ice bath in a large bowl. Bring a pot of salted water to boiling. Throw in the broccoli and cook about 3-4 minutes, then promptly drain in a colander and rinse with cold water. Next toss cooked broccoli into the ice bath to complete blanching. 

Whisk the ingredients of the dressing together. The flavor improves if you let it set awhile before adding it to the salad. 

Drain the broccoli and add red onions. Add chopped bacon to dressing and stir.

Add dressing to salad, mix and serve!
