Summer Berry Shortcake

Best dessert ever! You really can’t go wrong with shortcake. The berries of the season shine in this light, airy delight.

Serves 4. Time: Prep 25-30 min, Cook 40-45 min

Ingredients

Fruit

1 lb Strawberries, rinsed with stems removed

1/2 lb Blueberries, rinsed

1/4-1/3 cup sugar, to taste

Angel food cake

1-3/4 cup egg whites

1-1/2 cup sugar

1 cup flour

1-1/2 tsp cream of tarter

2 tsp vanilla

1/8 tsp salt

whip cream

1 cup heavy whipping cream

1 tsp vanilla

1 tbsp powdered sugar, or to taste

Method

Berries

Slice strawberries and mix with blueberries, add sugar and gently mix, put in fridge for later. I used coconut sugar with the berries this time but it’s a 1:1 trade off so go granulated if that’s what you have on hand.

Angel Food

  • Preheat oven to 325 degrees.
  • Mix flour and half of sugar in a medium-sized bowl (baking purists sift these ingredients together, I, however, did not and it turned out great). Egg whites need to be at room temp for this recipe to work (if you have trouble leaving egg whites out to reach room temp, just get them in a carton: pasteurized and everything.)
  • In a mixing bowl add egg whites, vanilla and salt, mix on medium-high until frothy, then add cream of tarter and whip until peaks form.
  • Next add the other half of the sugar in 1/8 cup increments, slowly incorporating.
  • Lastly, add in the flour and sugar mixture prepared previously. Again, slowly, 1/8 cup at a time.
  • Pour into UN-GREASED tube cake pan
  • Cook for 40-45 minutes or until top of angel food cake lightly golden and slightly darker around the edges.
  • Remove from oven and allow to cool 1 1/2 hours UPSIDE DOWN on a cooling rack (very important, must cool angel food upside down for it to set up right).

Whip Cream

Whip cream (either from scratch or from a can, you choose) if making from scratch you will need vanilla and powdered sugar. Place the bowl you’ll be whipping it in and mixer(s) in the freezer to prepare if you decide to make it from scratch. Whip heavy whipping cream on high, add sugar and vanilla. Whip until thoroughly incorporated.

Start with a slice of angel food cake, add berries and whip cream, top with another slice of cake layered with berries and whip, keep going on like this until you know its going to topple. Serve and smiles all around!
